This key is for the subject of something, in other words, what it is about. As this can be an open-ended definition, mappers have tagged this key on a variety of feature types.
This key is mentioned on the page for tourism=museum to be used for the kind of object or subject in exhibition. Pair it with subject:wikidata=* to make it more easily understood by the renderers.
Note however that tags museum=* and museum_type=* are also being used for this purpose.
